What’s in my salads
With the “Covid-15” weight gain a real thing over here… I took to ditching the chips and queso for salads for two weeks. After scouring through Pinterest for ideas – I’ve gathered the ingredient lists to make it easy for you to make your own salads.
Working from home I’m always needing yummy, healthy lunch ideas and these salads didn’t disaapoint. So whether you are looking to add a salad to your dinner rotation or squeeze in more healthier lunch options – I’ve included all the ingredients for 1 serving – so just increase as needed for serving a family!
And let me add… I dislike cooking and prepping so all of these salad recipes take less than 5 minutes to make!
Peach Wine Salad Recipe
When peaches are in season this salad is a must! With just a few ingredients this salad is so refreshing on a summer day. And don’t let the name confuse you – there’s no alcohol in this salad. 🙂
INGREDIENTS for 1 serving:
- Chopped Red Onion 1/4 c
- Spring 50/50 salad mix
- 1/2 sliced fresh peach
- Chopped pecans 1/4 c
- Crumbled goat cheese (as desired)
- Dressing: Brianna’s Blush Wine Vinaigrette
- Optional: Grilled Chicken
Mozz Ball and Veggie Salad Recipe
Move over meat – this salad recipe is full of packed with nutrients and lots of fresh ingredients!
This salad tastes great all year round when avacados are plenty!
Small fresh Mozzarella cheese balls are delicious when combined with avocado in this easy salad that also features red cherry tomatoes, cucumbers, and red onions.
Plus I found the perfect bottle of dressing to finish this salad off!
INGREDIENTS for 1 serving:
- Chopped Red Onion 1/4 c
- 1/4 sliced large Cucumber
- a handful of sliced cherry tomatoes
- 1/2 large avocado diced
- 4 ounces small fresh mozzarella cheese balls
- Dressing: Marie’s Wildflower Honey & Lime Vinaigrette
- Optional: Grilled Chicken or Bacon
BLT Bow Tie Pasta Salad Recipe
I mean what doesn’t taste good with ranch?!?? Bacon, lettuce, and tomato are just a few simple ingredients inside this BLT Pasta Salad that the whole family will enjoy!
Think of it as the classic BLT sandwich but with a few special changes.
For one… Everything is coated in Hidden Valley ranch dressing which makes it extra yummy. But the hint of barbecue sauce adds a bit tanginess to this salad recipe!
For the bacon, we prefer to use the fully cooked Hormel brand! Remember all my recipes take less than 5 minutes! 🙂
INGREDIENTS for 1 serving:
- 1c cooked bow tie pasta
- 1c torn romaine lettuce
- a handful of sliced cherry tomatoes
- 2 bacon strips cooked and crumbled
- 1 tsp barbecue sauce
- dash of pepper
- Dressing: Hidden Valley Ranch Dressing
- Optional: Grilled Chicken
Sweet Berry Poppy Seed Salad Recipe
The yumminess of this salad is the variety of berries – strawberries, raspberries, and blueberries. What fruit salad is complete without cheese – Feta cheese which is added for a salty tangy taste.
If you prefer a milder cheese – opt for grated mozzarella.
I love my salads with a little crunch – Sliced almonds do the trick.
For a sweeter taste – toss the almonds in some sugar in a pan and caramelize the sugar to make sugared almonds.
INGREDIENTS for 1 serving:
- 1 c Spring 50/50 salad mix
- 1-2 tbsp sliced almonds
- a handful of halved strawberries
- a handful of whole blueberries
- a handful of whole raspberries
- crumbled Feta cheese (as desired)
- 1-2 tsp chopped red onion
- Dressing: Brianna’s Raspberry Poppy Seed Dressing
- Optional: Grilled Chicken
Grilled Corn Wedge Salad Recipe
I’m a sucker for a good wedge salad so I took the basics of the classic favorite and tossed it into a salad with grilled corn! Perfect for dinner as this recipe does take 10-15 minutes since you need to grill the corn.
Grilled Corn on the grill will take about 10 minutes when you drizzle on olive oil, salt, and pepper. You will want to cook each side until grill marks form on the corn kernels and they are somewhat softened.
No grill? No problem. You can also use a cast iron grill pan at medium-high heat indoors.
For the bacon, we prefer to use the fully cooked Hormel brand!
INGREDIENTS for 1 serving:
- 1 c Romaine or Iceberg Lettuce
- 2 bacon strips cooked and crumbled
- 1-2 tsp chopped red onion
- crumbled Blue cheese (as desired)
- 1 cob grilled corn (sliced off the cob)
- a handful of sliced cherry tomatoes
- dash of pepper
- Dressing: Your Choice! I used a Caeser and it was yummy!
- Optional: Sirloin Steak
